These sticky minis are raw (not baked) and ready in 10 minutes but be careful: They make addictive! I made them twice this week 😉
Cacao & Cashew Buttercups ( 6 pcs )
Things you need:
CRUST
1 cup raw cashews
1 cup pitted dates
1 tbsp raw cacao powder
4 tbsp of cashew butter
Put the cashews in a food processor and grind the nuts to flour. Then add the dates and cacao and mix until everything sticks together. Press the pastry into your muffin tins and place 1 tbsp of cashew butter on top of your mini cake. Then store it in the fridge.
CHOCOLATE CREAM
2 tbsp cold pressed coconut oil
2 tbsp cacao powder
1-2 tbsp marple sirup
Meanwhile the pastry cools down, start to create the cream while blending everything together until you have a smooth paste. Take the muffins tray and fill up your cups. Put it back in the fridge for at least one more hour (better more). And then we grab a book and wait in front of the fridge.
