COCONUT CHIA PUDDING

I am officially addicted! Chia seeds are full of fiber, vitamins, minerals and Omega 3′s. They are also high in protein and calcium so a super food which is super good!

Coconut Chia Pudding with Mango

Chia pudding is also a good alternative if you are graving for something sweet and it`s a good snack for in beweetn because it fills up your tummy without straining your digestive system. Actually they even help to improve and balance your digestion. Just soak some chia`s in a cup of warm water and drink it when they have completely absorbed the water. It`s a kind of jelly drink by then and maybe you have difficulty to swallow it, but it truly helps!

If you want to make it as a dessert simply add a little extra maple syrup or some teaspoons of cacao powder to make a yummy healthy choco pudding!

Ingredients:

1 Tbsp of Chia Seeds

200 ml Coconut milk

1 Tbsp of Palm sugar

1 Cup of mango junks

1 Vanilla rod or some vanilla extract

Simply step by step:

Mix the chia seeds together with the sugar and the vanilla bean extract.

Add the coconut milk and let it simmer for around 15 minutes. After a while the chia seeds have formed their gel and everything is thickened to a pudding.

Fill it into a container and top it with some yoghurt, add the mango junks or any other kind of fruit, chocolate what ever you want.. the sky is yours!! And ready is the yummiest breakfast ever!
