To start International Yoga day right, I baked some very special Yogi muffins which recipe I am going to share with you in a bit. How I started this special day? I had a a giant cup of hot lemon water, watched the sun come out and taught a Vinyasa class by the pool. We moved, sweat, laughed.. and crumbled tons of chocolate all over our mats 😉

Almond Choco minis

1 cup of Spelt flour
2/3 cup of Oats
1/3 cup of Cocoa powder
3/4 cup of Palm sugar
1 tablespoon of Baking powder
1/2 cup Almond butter
1 cup of Almond milk

How to make them:

Preheat the oven at 200C for a few minutes.

Prepare the muffin cups or use a special baking sheet for muffins. I normally use both instead of greasing them with oil. While the muffins look shiny in their colorful little paper cups, the baking sheet gives a certain stability and helps the dough to stay in the cup.

Put all dry ingredients in a bowl which means, flour, oats, cocoa, sugar and baking powder.

In-between soak the almond butter in the almond milk and let it melt over low heat.

Incorporate the almond butter mix into the dry ingredients and stir until everything is properly mixed together.

Pour the dough carefully into the cups and put them in the oven for around 15 minutes.

Among all nuts, almonds are the most nutritionally dense. This means that for every calorie you consume you get more vitamins and minerals than from any other nut.

One tablespoon of almond butter contains as much protein as you get from the same quantity of meat Almonds are an excellent source of fiber which helps your digestion and nourishes your tissues at the same time. So with all their health benefits, they are an ideal after workout food.

Almond butter also maintains your blood sugar and thereby reducing the risk of getting diabetes, they control your blood pressure and are well known as remover of bad cholesterol (LDL).

For whatever reason you don`t like almonds replace them with the nuts of your choice.
