I’ve done my best to make the Chai latte of my dreams at home and think I’ve nailed it!! In this version we go old school! Which means NO ready made powders just simple fresh spices from the Indian market or the indian section of your supermarket.

Almond Chai Latte

All you need is:

2 cups of water

1 cup of almond milk

1 Tbsp loose black tea leaves ( or 2 – 3 tea bags )

2 Tbsp of whole chai spices * ( dried ginger, black pepper, cloves, cardamom and a bit of nutmeg my Indian friend whispered )

1 Tbsp palm sugar ( or cane sugar, stevia, honey, maple, agave sirup.. you name it )

A pinch of pure Vanilla extract

* MAKE YOUR OWN READY – TO – GO CHAI MIX:

1 Tbsp of Black Pepper corns

1 Tbsp of Cloves

1 Tbsp of Cardamon seeds

1 Tbsp of dried Ginger

1/2 Tsp of cinnamon powder

Take your food processor or old coffee grinder and grate all the whole spices together. Add the cinnamon powder and put them in a jar. Store it in a dry place  >>>  Note that you need a much finer strainer for grinded spices! Best you use a nut milk or cheese cloth. If you don` have one of both you can also leave them whole.

Instructions:

Add the water, tea and spices to a saucepan and bring to boil over high heat.

Then lower the heat and simmer for another 10-15 minutes.

Add the almond milk and any sweetener of your choice. Stir until the sweetener has completely dissolved.

Remove pan from the heat, grab a strainer and pour into your cup.

 

 

Topping for a Chai Latte:

Top with some whipped coconut cream and sprinkle with some cinnamon powder for a twist.
